Healthy Eating Tip: Adding Protein to Salads

“Sometimes you feel like a nut…”🎶

As I’m adding some peanuts to my salad today, that catchy tune popped into my head. More often that not, I add nuts to my salads. Today it is a simple handful of dry-roasted Planter’s Peanuts. I have different nut mixtures ready to go, however, so that way I can mix it up and have a variety of flavors on salads.

Nuts proteinToday’s salad is loaded with a variety of goodness, including:

  • Mixed greens
  • Beets
  • Lemon cucumber
  • Hummus
  • Mini bell pepper
  • Chia seed
  • Kalamata olives
  • Dijon Balsamic dressing

I love a variety of texture and flavor, so that’s why my salads are often loaded. Look for fun ways to make your salad an explosion of flavor, texture and taste. If you want some crunch, definitely add some peanuts. How are you adding protein to your salad today?

Recipe: Hummus Tacos

As much as I love to cook, there are days that I want something quick and easy to eat, but still healthy! Today’s

Today’s lunch: Hummus Tacos.


Ingredients per taco:
1 small size tortilla – wheat roll better than corn
1/4 cup hummus per taco
3 tomato slices per taco
1/4 avocado per taco
2 lettuce leaves
Directions:
Tortilla on plate. Spread hummus down middle. Stack tomato, avocado and lettuce. Fold like taco and enjoy! I usually have two for lunch with some fruit on the side. Enjoy!

gurusWarm weather + outdoor seating + healthy food = great dinner out. Chipotle chicken wrap, Asian salad with tofu, sweet potato fries and spiced hummus with pita and chips. Mmmmm… thank you! Great spot for casual dates, business meetings, and large family parties. Always something for everyone in the crowd.

Recipe: Hummus

hummusNeed an appetizer for a party? Try Hummus with veggies and crackers/chips.

Recipe: 2 cans garbanzo beans, 1 drained Juice
1 lemon
1/2 teaspoon cumin
1/2 teaspoon paprika
2 teaspoon organic no-salt seasoning (my fav is Kirkland)
1/2 teaspoon cayenne/chili pepper
2 clove garlic
1 tablespoon tahini
Blend all ingredients in high powered blender for 35 seconds

Note: additional ingredients could include kalamata olives, sun dried tomatoes, or whatever you want!
