Recipe: White Bean Salsa

whitebeansalsaI love having a bean salad on hand for quick meals, or to add to other dishes. Make this dish ahead of time so that the juices blend together.

Ingredients:
1-15 oz can low-sodium white beans rinsed
1 medium #tomato cubed
1 medium avocado cubed
1/2 cup fresh Italian #basil, julienne chop
1 teaspoon balsamic vinegar
1 teaspoon Organic No-Salt Seasoning
For extra heat, add a pinch of red pepper flakes

Directions: Mix together all ingredients and keep in refrigerator in a sealed container. This is such a tasty dish, it won’t last long but will be fresh for up to 3 days.

Serving ideas:
Appetizer with chips
Scoop on top of green #salad
Toss with linguine noodles – add extra balsamic and olive oil
Mash up the mixture and use like a hummus spread in a wrap with lettuce

Enjoy!

Restaurant Review: Taco Janes – California

taco-janes-san-anselmoTaco Janes in San Anselmo!

I’ve heard great things about Taco Janes in San Anselmo for years, so I was pleased to join my mom her long time BFFs for dinner. While the menu sports plenty of meat lover Mexican dishes, I was delighted to find several veggie based dishes too. I enjoyed the veggie burrito (with optional wheat tortilla). Easy to request no cheese or sour cream for vegan dish. chips and salsa was rockin’ good! Other ladies really enjoyed the salmon on salad and fish tacos. Looked great! This is a great place for family dinner, date night, gathering of friends. If you have opportunity to meet the restaurant owner Matthew, take the chance to ask him about his photography on the walls – he has an eye for capturing Cuban culture in photography.

Recipe: No Cheese Nachos

no-cheese-nachosBefore going nutritarian, I was a sucker for nachos and all the cheesey gooey goodness. So here’s my version of no cheese nachos!
Ingredients:
Rice/bean chips
Diced tomato
Vegetarian chili
Cubed avocado
Chopped cilantro
Salsa

Just as good as the real deal!

Restaurant Review: Taqueria 27 2 – Utah

taqueria27Always great to connect with friends. When I can share a new restaurant with them is even better. Restaurant review this time: funny servers, lentil with veggies yummy but serving too small, same goes for side of rice. Abundant chips & salsa… with the special hot sauce is spicy-hot-delight! Dessert donuts were ok, but not worth the sugar rush. veggie taco not nearly as good as the pear beet taco last time. Dinner time is much louder than lunch, less conducive to conversation. All-in-all still a great spot for vegan yumminess! I’ll be back again… probably just for lunch.

Restaurant Review: Don Miguel Mexican – Utah

don m 1On a birthday weekend get away to Cedar City, we stopped at Don Miguel’s for lunch.

Klint had the appetizer plate with mini quesadillas, beef taquitos, loaded nachos. The guacamole was really creamy and had the right amount of spice. Salsa was chunky and had the right amount of onion and cilantro.

Jen had the chile verde burrito. The verde sauce was chunky and spicy, but not hot. Pork chunks were tender and moist. Really, how you want chile verde to taste.

The only problem was that everything was WAY over salted. Salsa, guacamole, chips, entrees, appetizers, rice, beans, etc. Everything was too salty. Couldn’t drink enough water to compensate for the sodium overload.

don m 2All-in-all, Don Miguel Mexican was okay, not amazing. If we’re back in Cedar City and looking for Mexican food again, we’ll probably go to a different restaurant.
