Restaurant Review: Subway – Utah

subwayI was running between appointments starving but needed something fast for  lunch. So, thought I’d give Subway another try. Pleasantly surprised to find they have a Veggie Patty option now. It was surprisingly tasty, moist and filling. Trying to avoid too many bread carbs, I went with the 6″ size. Loaded with as many veggies as you like, it’s a pretty good option. Mine had spinach, lettuce, tomatoes, cucumber, black olives, banana peppers, and green bell peppers. I opted for sriracha for sauce instead of mayo or mustard. All-in-all, I thought the service at The District Subway was great – friendly, reasonably fast, and helpful.

 

Restaurant Review: Pawit’s Royal Thai Cuisine – Utah

Restaurant review: Finally made it to Pawit’s Royal Thai Cuisine in Holladay, Utah. Fantastic fresh Thai dishes! We enjoyed curry puffs and sticky rice with peanut sauce for appetizers. Their house green salad was huge and a whole sliced mango (I saved some for dessert). The Tom Kha soup is on the sweet side, but lots of veggies. The Spicy Tofu dish is fantastic… Plenty of veggies and the sauce has some kick! If you want the “real” Sriracha, ask for it on the side… Use sparingly, unless you like your taste buds fried. Great restaurant for date night, family meals out or business lunch. Kind and helpful wait staff. Make sure to check out the bathroom…

Restaurant Review: Finca – Utah

Restaurant review: Finca is a little slice of Spanish divine cuisine in Sugar House. Met a friend for business lunch to discuss my upcoming trip to Spain (stay tuned for awesome restaurant reviews in late December). James Gehrke is quite the foodie too, so I knew this would be an epicurean delight! When I showed us, he had the cheese and fruit platter already at the table. Nibbling on almonds, grapes, manchego cheese, crispy toasts and dried fruits, we asked the helpful waitress for suggestions. She highly recommended a tapas assortment since it was both our first time there. We enjoyed sardines on creamy cheese spread with sauteed onions and bellpeppers… an explosion of salty creamy sweetness. Wow. The moist meatballs, albondigas, floating in a creamy tomato sauce were mildly spiced but oh so delicious! Garbanzo beans with chard and butternut squash was a wonderful autumn inspired vegan dish. My favorite dish was the roasted brussel sprouts… My mouth is watering again thinking about that dish. Totally looking forward to returning for dinner sometime soon. Simply put into one word: fantastic.

Product Review: Trader Joe’s Masala Simmer Sauce and Westsoy Seitan

Product review: Gotta love Trader Joe’s sauces that allow for a quick cook meal. Their Indian sauces are some of my favorites, especially the Masala Simmer Sauce. This was my first time cooking seitan and it was delicious and the texture was like a soft chicken. Simmering the seitan in the masala was a snap. Served over basmatirice made for a quick and easy vegan dinner that even @glttrgrl enjoyed! I look forward to cooking with Seitan again.

Product Review: Veggie dumplings

Having quick to prep items is helpful for a healthy way to eat. Sometimes I just don’t have time, nor the desire to cook so I make sure to have options on hand. Veggie Dumplings are quick to cook by boiling for few minutes. To reduce calories, don’t pan fry in oil. Just serve hot after boiling with a small scoop of Sambal or Sriracha for a little spicy kick or drizzle of soy sauce. Great side dish or quick snack. Purchase at Asian food markets. In Utah, I found these at Ocean Mart in Sandy.

Product Review: Trader Joe’s Thai Vegetable Kao Soi.

While the coconut milk soup was tasty, the vegetables offered nothing. Perhaps cooked too long or the soup was too flavorful, the veggies were soft and flavorless. There wasn’t nearly enough veggies or noodles to make this a full meal. For a quick freezer meal, I won’t be picking this one up again. Sorry, but back to the drawing board Trader Joes.

Restaurant Review: Ginger’s Cafe – Raw Tacos – Utah

gingers-raw-tacosHoly-divine-raw-tacos- Batman! Purple ‪cabbage ‬leaves piled high with all sorts of yumminess!‪ Sunflower‬ seed and sun-dried tomato spread topped with ‪‎avocado,‬ ‪corn,‬ ‪‎bell pepper,‬ ‪tomato‬. The ‪‎falafel‬ crackers were a nice added crunch. Great ‪‎dish‬!

Restaurant Review: Myung Ga Korean BBQ – Utah

Myung Ga Korean BBQ in West Valley City, Utah. Great spot for a ‪business lunch‬ meeting. Next to ‪‎Hale Center Theater‬ for‪ ‎date night‬ ‪dinner‬. Dishes are flavorful and service pretty quick. Great options for ‪‎meat lovers and ‪‎vegan‬. ‪‎Vegetable‬ ‪‎Tempura‬, appetizer‬‪ ‎tofu‬ ‪‎soup‬, ‎hotstone‬ ‪‎rice‬ with ‪veggies‬‪.

Recipe: Asian Noodle Green Salad

Ingredients for dressing – whisk together and set aside:
1/3 cup rice wine vinegar
1/3 cup gyoza sauce (or low-sodium soy sauce)
1 tablespoon dijon mustard
1 tablespoon julienned thai basil leaves

Salad ingredients:
2 cups asian noodles, cooked then chilled and cut into 1-2″ pieces
1 cup carrots, sliced
1 small cucumber, cubed
1-8 oz can sliced water chestnuts, drained
1-15 oz can baby carrots, drained and cut into 1 inch pieces
1 yellow bell pepper, diced
1 tablespoon sesame seeds
1 tablespoon chia seed
3 stalks celery, diced
1/2 cup raw peanuts
1 cup baked tofu, cubed (I buy at Trader Joe’s; substitute edamame)
Toss together above ingredients with 1/2 dressing mixture. Add to 1 head red leaf lettuce and toss well. Serve with 1 avocado cubed and 1/2 cup rough chopped cilantro.

Serve immediately with extra dressing on the side. Will be plenty for 3 adults, or use as side dish for 6 people with another Asian dish.

Product Review: Udi’s Granola

udis granolaOne of the biggest changes for me around food was reading food labels. As you learn about what is added to food, you’ll realize how there’s a lot of additives, sweeteners, etc. added to our food. I look for as few #ingredients as possible and as natural as possible, of course! I found this yummy granola at Walmart, ironically! Few ingredients, great taste. I added soy milk and peach for a delicious and quick breakfast.
